Ventilation Re-Invented
EVO EVent Eviscerates Grease & Odors without Exterior Ducting
Foodservice operators have always been beholden to procuring ventilated spaces to base their kitchen operations in. Recently introduced self-contained appliances have added some choice to the number of locations that could now support food finishing tasks. Up until now, though, there were menu, size and capacity limitations on these solutions. All of that and more is about to be upended.
EVO has created a multi-patented hood which accommodates over nine (9) usable linear feet of heavy-duty equipment. It is uniquely suited to primary cooking. Best of all, this self-cleaning game-changer eliminates odors and obliterates grease-laden vapors.
Evo has long been the industry leader in ventless griddles. Upon joining the Middleby Corporation, they were able to capitalize on the expertise of their sister companies and utilize corporate resources to further develop their cutting-edge technologies in the commercial cooking equipment arena.
Prior to the recent introduction of the EVent, there were no means to limit the odors and heat generated by the ventless cooking equipment (around in niche markets for decades). These familiar products still have strict limits to size and capacity. In addition, grease mitigation and sanitation were plagued by the reliance on manual processes.
The EVO EVent Open Canopy Hood has a completely self-contained filtration process which reduces grease emissions below levels allowed in the EPA 202 test method complying to the UL710B Standard. It allows for ventless operation of many different types of electric cooking appliances such as fryers, griddles, combi ovens, charbroilers, and more.
Vyv antimicrobial LED lighting technology provides white antimicrobial light for operational cooking and violet antimicrobial light during non-operation times to kill* odor causing bacteria and prevent mold and mildew growth.
The five-stage filtration system uses washable filters to obliterate grease laden cooking vapors and eliminate cooking odors, integrating washable grease baffles, vaporizer, scrubber and particulate filters, along with air purification employing ozone and wet air scrubbing that captures and processes cooking vapor, returning clean air to an occupied space. A UV absorption monitor ensures ozone levels stay below 0.1ppm.
The system is pre-engineered and includes a factory installed ANSUL® fire suppression system. The interactive touchscreen control provides instant filter and system status.
Up-front costs are comparable to traditional hoods, while total cost of ownership will be dramatically reduced. Fully warrantied for one year and backed by the clout of the Middleby Corporation, you can now witness the next generation of ventilation at the Pecinka Ferri Culinary Experience in Fairfield, NJ.
