Four Types of Ventless Options & No-Vent November

Hey there, it’s Ventless Joe, back to talk about ventless options and a special event coming up at Pecinka Ferri. This November, we are proud to present No-Vent November, an EVO E-Vent where we will showcase the newest ventless technology that is going to transform commercial kitchens. For a refresher on the benefits of a ventless kitchen, read my previous article on this topic. And since it is back-to-school season, let’s review some Ventless 101.

1. Catalytic Converters

Catalytic Converters draw vapors from the oven, causing heavier particles to settle toward the drain while lighter ones rise to the condenser. As the vapor cools, water forms and drips down the drain. The remaining vapors are heated and pass through the catalytic converter, converting them to carbon dioxide and water. These harmless gases then return to the oven. Catalytic Converters are used in equipment such as combi ovens. 

2. Electrostatic Precipitators

This technology is as cool as it sounds. It uses electrical charges to capture and remove smoke and grease particles from the air, making it ideal for equipment like the EVO EVent Griddle. This method of air purification utilizes the high-voltage ionization principle—charged particles are attracted to collector plates carrying the opposite charge. This captures oil and grease particles in the exhaust, and clean air is discharged after it’s purified. Science!

3. Filters Galore

Filters are a traditional method of keeping the air clean in the kitchen that we are familiar with. Filters come in all types and sizes — HEPA, charcoal, paper, mesh, ozone — you name it. These multi-layered workers capture particles that cooking adds to the air. Whether you’re frying, grilling, or baking, filters are on the front lines, scrubbing the air clean so you can keep cooking without the need for traditional ventilation.
